Internship Program
Marked for Dessert offers a complete internship for students interested
in learning hands-on the fine art of wedding cake production as
well as general bakery production (with the exception of yeast bread
products). Although some requirements vary from school to school,
the experience for all students is extensive and extremely educational.
Experience Overview
- All interns will work directly with pastry chefs and cake stylists
to prepare components for wedding cakes as well as cookies, cakes,
pies, and pastries for our retail store.
- During the internship program, each intern will travel to a
wedding reception site for cake delivery and set-up procedure
at least once.
- Each intern will complete an individual project. Projects will
be a joint decision between the student and owner based on student
interests and company needs.
Time commitment
Culinary school students are bound by school minimums. Most internships
last 10 weeks.
General proficiencies
Interns will work on the production schedule dictated by the event
calendar. Throughout the course of the internship, a set of specific
proficiencies will be emphasized by Marked for Dessert staff and
mastered by the intern:
- Swiss meringue buttercream
- Assembling cake layers
- Crumb coating
- Icing cakes
- Stacking cake tiers
- Mixing cake batter
- Making gum paste
- Make a gum paste rose with leaves and calyx
- Piping basic borders (rope, bead, shell, rosette, colonial scroll)
- Preparation of regular bakery items for retail store location
Requirements
In order to be considered for an internship placement at Marked
for Dessert, applicants must meet a set of basic requirements:
- Must understand procedures for proper dishwashing in a triple
sink
- Must understand and exhibit proper procedures for equipment
cleaning
- Must already possess or be in pursuit of a Chicago Sanitation
License
- Must provide two professional references, at least one of which
is food business related; this may be a chef instructor
